A simple way to serve seasonal sweet, red peppers
Sweet red peppers are "perfect at this time of year", says Skye Gyngell in the Independent, and never better than in this "sweet, fresh dish". Eat it on its own, with roasted chicken, or "as part of an antipasti plate, with salami, prosciutto and roasted aubergines laced with olive oil, marjoram and mint". Serves six. ·
